CLOVES ( FAMILY: Myrtaceae)
DESCRIPTION: Clove, small, reddish-brown flower bud of the tropical evergreen of the family Mrytacaea. COMPOSITION:
Cloves contain 14 to 20 percent essential oil.
The principal component is the aromatic oil eugenol (20 to 35%). Cloves are strongly pungent. Three essential oil are available from this spice namely clove bud oil, clove stem oil and clove leaf oil. Each has different chemical composition and flavor.
